Oktoberfest for me! Won't crack it until our annual party - if I can really wait 8 months. This will be my first true Oktoberfest lager, instead of the typical Oktoberfest ale. I'm going to try bittering with my small crop of homegrown hops (1st year plants).

No brewing here, but I have to bottle my first AG and transfer my second (Walker's IPA - can't wait to try it) to secondary.

We're brewing my Independence IPA tomorrow since we have plans on Sunday.

Recipe is as follows :
2 pounds extra light DME
6.6 pounds pale LME
2 pounds Crystal Malt 20L
1 pound Munich Malt 10L
2 ounces Summit hops (60 mins)
1.5 ounces Simcoe hops (45 mins)
1.5 ounces Centennial hops (30 mins)
1.5 ounces Cascade hops (2 mins)
1 ounce Cascade (dry hopped 14 days)
1 ounce Centennial (dry hopped 10 days)
Pacman yeast
Estimated O.G. 1.068
Estimated F.G. 1.017
Estimated ABV 6.6 %
IBU 95.0
SRM 12.3

Kicking around the idea of doing the Centennial 30 minute add a little at a time over the final 30 mins.

It's All Grain Kolsch Time at my house this weekend.

6.5 # Pils
2.5 # Wheat
1 oz. Perle 60 min.
1/2 oz. Spalt 45 min.
1/2 oz. Spalt 5 min.

WL 029 German Kolsch Yeast.

A Pete's Wicked Ale clone tomorrow. I'm not too excited about it but it's for a party in April and I figured this was a good brew for the common folk.
