Hi everyone-

I'm going to make up a batch of Emma's Ale.

Has anyone made this?

How is it?

I am in the habit of adding 1# wheat DME to most of my batches (head retention/mouth-feel), is that a good or bad idea with this one?

Looks like a solid recipe to me. Thames Valley is a great yeast, but it can take a few weeks to clear.

If you are going to brew a kit I'd just brew it as is. Adding extra malt will make for a stronger beer and will change the balance since you aren't also increasing the hops.

Well, yes, of course it will disrupt the balance some. But will it upset it too much?

I brewed the all-grain version of this. I tried a sample last night after two weeks in primary - down to 1.012 from 1.052. It's good, but a little rough around the edges, and as Oldsock hinted at, it's definitely not clear yet. I racked to secondary instead of kegging.

I going to pick it up this weekend. I like things a little more on the malty side, so I might add some wheat, but I don't think a whole Lb.
