I had lunch at Rocky Mountain Brewery today and sampled their Da Yoopers (cherry pie) beer. Apparently it took 1st in the 2010 World Beer Cup for fruit beers.

I was surprised it was so sweet.

I don't have the ability to force carb. Is there any way to get a sweet fruit beer like this while bottle conditioning? It's more out of curiosity and for the sake of brewing knowledge as the beer was much too sweet for me.
 
You could try a low attenuation yeast. Maybe Irish (high ester). Da Yoopers has an OG of 1.060. With Irish (or Scottish), you would be around 1.022 +-3 or so after bottling.
