Im no expert at this, its my 6th batch. Ive made a saison before and loved it, so Im attempting another. I forgot my recipe sheet when I went to the LHBS, so I guessed a couple of things. I only bought for 5.5 gallons, but Im going to make 8 so Ive stretched a couple of ingredients...
Any help much welcomed!!!

Gotta say, you aren't going to need that orange peel in there. That yeast will give you a good dose of citrus flavor and with that big load of hops at 60, it'll be plenty bitter.

The more I look at it, the more that looks like a ton of bittering hops for a saison.

I think youre rght. Like I said, Im stretching ingredients from a purchase for 5 gallons. So I was going to use up some hops Ive got in the freezer. Ill not put in the Cascade, they were picked form a friends garden in October and are not looking too fresh anyhow.

So here is what happened, not exactly as planned but due to scaling the recipe, forgetting recipe at brew-store and general hap-hazard thinking it is what it is...

Ill post results as and when!

Edit: I forgot, I put the basil in a grain steeping bag and dunked it for final 5mins of boil. I also threw the frozen cascade buds (2oz, whole, old) in the bag as I figured hop aroma is never a bad thing. Also, I kept the boil small as I was doing this indoors on a gas stove that struggles to boil more than 5 gallons. Then I put 3 gallons of bottled water in after the boil; is this ok? It had the added bonus of bringing down the temp fast after the boil, but Im not sure Ive heard of anyone doing it before.

Any comments on my days work are much appreciated.
