I made a starter almost two weeks ago from some washed S-05. I got busy, then got sick as a dog and it has been in the fridge cold crashed for about 2 weeks. I have used one once before that was over a weel old in the fridge but how long is too long to wait?

I've done 12 days once when i had to go out of town for work unexpectedly. Went fine, was some washed pacman.

You could always step it up if you have any doubts.

Yeah, it shouldn't really matter how long, as long as you followed good sanitation so it doesn't get infected.

A lot preach about pitching at "high krasuen" but remember the #1 goal of a starter is to "up" your yeast cell count...

The question is, how viable? A good rule of thumb for yeast stored under beer in the fridge is a loss of 25%/month. So after two weeks it would be about 87% viable.
