I am looking to brew an APA on Wednesday. I love Simcoe hops but not all by themselves. Does anyone have a recommended pairing for them?

I was thinking of Citra to try something new, but am open to anything (Amarillo, Chinook and Centennial have also come to mind).

Probably would be doing just Simcoe for bittering and then it along with the other hop for flavor/aroma/dry.

Thanks!

Simcoe and Amarillo are like the yin and yang for APAs/IPAs, IMO.

Simcoe is very piney and resin-y, Amarillo is a citrus bomb. Fantastic combo.

I've also combined them with Centennial with good results.

I did Simcoe and Palisades a few IPAs back and really enjoyed it.

Wow. That is a lot of good information. I think I will probably go with the Amarillo this time around and try one of the others next time.

Thanks so much.

Nelson Sauvin also goes well with Simcoe, but it's a VERY pungent hop, so consider using it in smaller amounts.
