Hey guys I was just wondering what you think of this recipe. My ingredients/equipment will be arriving in a couple of days so I made up a recipe in beersmith. I'm going for a hoppy pale ale. It's a 3 gallon batch. I'll be mashing and boiling in a 19lt stock pot. I was planning on mashing for probably 70 mins and boiling for 60 min. Here are my ingredients;

2300g of Maris Otter.
140g Cara-pils
140g Crystal 55l
140 White wheat.

14g Challenger (60mins)
17g Cascade (5 mins)
17g Cascade (Dry hop, 5 days)

Any feedback/suggestions would be really appreciated! I'm probably going to end up using something like youngs ale yeast or Safale Yeast S-04.

84.6% Maris otter
5.1% Cara-pils
5.1% Crystal 55l
5.1% White wheat

Sounds like a tasty pale ale with the cascades giving it an american slant, but predominantly an English malt/estery character. Mashing at about 154F (68C)?

Grain bill looks fine, but if you want this beer to be on the hoppier side for a pale ale, I'd recommend two late hop additions. I do a 10min and 0min addition.

I think each addition should be at least 14g, but you could probably go as much as 21g. Dry hopping with 17g will be nice.

I was hoping to keep the hops American but I can't find a decent UK source yet, and yes I'll be mashing at 154/155F.

I am a big hop fan so I may actually up the hops a bit. I also have some fuggles and goldings, along with the cascade and challenger. I'll also have some centennial in a couple of days. What about centennial for 10 mins/0min?

personally, I always add a flavor addition (25-20min) hop, it normally doesn't have to be much. I have found adding those 20min additions really worth their weight in hop :-p.

I ordered some more hops tonight so I now have Chinook in the equation. Really wanted to use this hop.
