Yeast Starter: yes
Batch Size (Gallons): 5.5
Original Gravity: 1.065
Final Gravity: 1.012
IBU: 119.8
Boiling Time (Minutes): 20
Color: 7.5
Primary Fermentation (# of Days & Temp): 14 @ 72F
Tasting Notes: Very hoppy after initial kegging. Multiple people indicated noticable citrus flavor.

11.50 lb Pale Malt (2 Row) US (2.0 SRM) Grain 86.79 %
1.75 lb Caramel/Crystal Malt - 20L (20.0 SRM) Grain 13.21 %
1.00 oz Centennial [11.00 %] (90 min) (Mash Hop) Hops 6.9 IBU
1.00 oz Simcoe [12.00 %] (20 min) Hops 23.6 IBU
1.00 oz Amarillo Gold [9.60 %] (20 min) Hops 17.0 IBU
1.00 oz Centennial [11.00 %] (20 min) Hops 19.4 IBU
1.00 oz Amarillo Gold [9.60 %] (15 min) Hops 13.9 IBU
1.00 oz Simcoe [12.00 %] (15 min) Hops 19.3 IBU
1.00 oz Simcoe [12.00 %] (5 min) Hops 7.8 IBU
1.00 oz Amarillo Gold [9.60 %] (5 min) Hops 5.6 IBU

Mashed at 150F for 90 minutes, with 1 oz. centennial in the mash for the full 90. Also, used 1.25 qts water per lb. of grain.

The beer was quite good. I bottled about 4 gallons and took it home for my son's first birthday party. There was about 3 or 4 other beers available, but mine seemed to disappear before the other beer was touched. Anyways, I am a hop head so this could be tamed down a bit. The citrus from the Centennial was also quite evident so maybe pull back on that a bit as well. But overall, I was quite happy and will be making this again with slightly less Centennial and possibly less Amarillo. Makes a good summer beer as is, though.
