During my daily search for more things to do and buy for my homebrew addiction...I mean hobby I stumbled upon this temperature controller.

For $49.99 it comes fully assembled, for $39.99 it comes as a kit you assemble:

I'd go with the 2". You can always stir the wort with a sanitized spoon if your worried about hot/cold spots. You will be hitting the 6+" with everything...ask Ron Jeremy!
