Yeast Starter: 5000 mL   
Batch Size (Gallons): 11   
Original Gravity: 1.061   
Final Gravity: 1.015   
IBU: 67   
Boiling Time (Minutes): 90   
Color: 9 SRM   
Primary Fermentation (# of Days & Temp): 7 days @ 66F   
Secondary Fermentation (# of Days & Temp): 7 days @ 66F   
Tasting Notes: Citrus aroma when youngverall great hop aroma and flavor with balancing maltiness.   

At the beginning of September, I was asked to brew some beer for an event on Oct. 1. Normally I would ferment longer, but in this case I had to make an exception. I force carbed at 30 PSI while shaking the keg for a few minutes (temp of beer was 38F). I then waited 24 hours, purged the CO2, and set the pressure to 8.5 PSI. Aroma at the event was incredible citrus. Kind of reminded me of Drifter Pale Ale when it's fresh. The goal, though, was to have something close to Ska Brewing Modus Hoperandi. And now, after over a month, it's just about there.

I'd never done a double batch before, so I missed my OG due to a lack of space in the mash tun (less first runnings than planned). I had a small amount of Amarillo that I wanted to use up, so I added it with the dry hops. This beer kicks a$$!

Batch sparge w/ 4.16 gal of water at 195F; hold for 10 min

Fermentation Schedule:

Holy Hops batman. That beer looks amazing. I love amarillo addition.
