use 4 lbs of sugar for 5 gallons of juice. throw in 1 pack of montrachet wine yeast. yield is 5 gallons at 14%, but more importantly, it's good-tasting cider. not my recipe, but i use it since it works

If we knew what it was we were doing, it would not be called research, would it?
