Hey fellas,

Ok I never tried or made mead but my friends keep telling me about it so I just had to give it a go. I got the recipe from the back of my wine book so hopefully it works out. Let me know what you think.

So here is my recipe:
Honey 3.58 lbs
4 liters Water
3 tsp's Acid Blend
Yeast EC-1118

Predicted OG: 1.115
Predicted ABV: 15.3%

It started fermenting about 12 hours later very very slowly... Gave it a good stir today for the first time, and all looks good. Hopefully the fermentation kicks up a notch soon.

Do I treat it like I treat homemade wine making... Rack to secondary after 2 weeks and let clear then rack again and clear/condition?

Meads are a very sloooowwww fermentation. I think mine went for about a month before I racked to my secondary. It's been in my secondary quite awhile now. I will get around to bottling it someday.

yes my primary took 2 months. I would wait until your airlock stops bubbling then rack it to secondary and add meta and adjust acid similar to winemaking. Then I would wait several months before racking again.

I just did my first mead (actually Melomel) and Iwas told to definately use yeast nutrient. I did not notice yeast nutrient in your recipe. It might be something to consider. My blueberry mead is bubbling quite well after just 24 hours using Wyeast sweet mead smack pack and 3 tsp nutrient. My OG ended up at 1.095.

LS_Grimmy - As Jeepsn beer posted, Honey lacks nutrients (and also acid) for a yeast to get a fast ferment. Use both for better results
