Recipe Type: All Grain   
Yeast: WLP 007   
Yeast Starter: 1 quart   
Batch Size (Gallons): 6   
Original Gravity: 1.049   
Final Gravity: 1.012   
IBU: 30   
Boiling Time (Minutes): 90   
Color: 10 SRM   
Primary Fermentation (# of Days & Temp): 7 @ 70f   
Secondary Fermentation (# of Days & Temp): Keg and Crash at 40F   
Tasting Notes: Brewing 7/27/10   

Original Recipe from Breiss that came with the CaraCrystal Wheat seasonal malt. I modified the hops, and I chose WLP 007 for a little English character and quick, dry ferment.

Brewing for a flavorful summer ale and to try some new ingredients (caracrystal wheat and WLP 007)

Description: Caracrystal® Wheat Malt adds a nice “softness” to the finish in this full flavored pale ale. Recipe developed
by Doug Hindman, Elliott Bay Brewing Co., Burien, Wash., summer 2009.

Quantity Ingredient In 6 gallon batch
82% Briess Pilsen Malt = 10 lbs
9% Briess Caracrystal® Wheat Malt = 1 lb
9% Briess Flaked Oats = 1 lb

Total boil time = 90 minutes
Original Hops:
90 minutes: Bravo (14.7% AA) pellets
10 minutes: Bravo and Amarillo (8.6%)
Cascade (4.77% AA) pellets and
HBC 369 leaf (experimental hop)
Dry hop
fermenter: Amarillo and Cascade Pellets

My hops: 90 min .5 oz Magnum
10 min .25oz Cascade, .25 ozAmarillo and .25 oz Centennial
Dry Hops: Amarillo Cascade 1oz each

Wow, this beer was great. Lasted 2 hours. Perfect summer beer. No changes to this recipe.

I'm looking to come by some HBC 369's, any idea how to find them?
Fermenting: Lambic and Dry Orange Blossom Mead
Conditioning: Brett Drei Golden Strong
Next: Nut Brown, Wee Heavy, & Rye IPA
Drinking: Brett - Aussie Blonde, Black IPA, Belgian Stout, Munich Helles
