Starting to put together a recipe for a dunkel. Now this is going to be my first attempt at one of these, so any help or opinions would be great.

I haven't made one either, though I've been looking into it, as well. Most of what I've found (in terms of traditional Dunkels) is that they don't use any roasted grains at all. I'd be inclined to replace the chocolate malt with a bit of CaraMunich.

I'd also keep the IBU's in the 12-15 range, but that's just me.

OTOH, (to play devil's advocate with myself) I just made a Doppelbock with 1/4lb of Carafa II because I like the roastiness I find in Celebrator and that is absent from Optimator, so fortunately we, as homebrewers, aren't bound by tradition!

hmm.....good points

Now this was brought on by my tour of the local breweries over the last weekend. One had a dunkel that used 9 different malts and was really tasty. Both SWMBO and I had one and agreed that this needs to be done in the near future. Plus the turnaround on a weizen is a bit shorter than most.

If it's brewed in a North American microbrewery then all bets are off! We tend to take traditional styles and run with them, hence you have fruity Hefeweizens. If you found a brew you liked try to get as much information from the brewer as you can and use what malts make sense to your palate.

Sounds a little like my weizenheimer.

for 11 gal.

8 #German Pilsner

9# German Wheat

.5 # Chocolate (debittered)

1 # Dark Munich

1 0z. Liberty at 60

I used the Wyeast American Wheat but I wish I would have used a european maybe the Bavarian.

Nice work on stepping up to the 10 gal. AG

Hope to try your Koelsch in a few weeks when I come down.
