Just about to start my first batch of mead, and I was wondering if there is any advantage to bulk aging a 1 gallon batch vs bottling once the fermentation has stopped, and letting it bottle age? Also would there be any different for a 5 gallon batch?

From what I've gather on the forum is that when you bulk age you get a more consistant end product for the entire batch. When you age mead in seperate bottles there is more room for different tastes. Personally, I like to bulk age for at least 6 months after fermentation stops before I bottle.

Bulk aging also allows you to tweak it as it develops - adding oak, acid, tannins or sweetening can all be done after a year or more depending on what it tastes like.
