Default Traquair House Ale Clone

Feeling somewhat emboldened upon discovering that my first batch has actually turned into beer, I've decided to step things up just a notch for my second. Since everyone says that liquid yeast will help, I'm going to go that route...and I'm going to make a starter. And I'm going to steep some grains. Here's the recipe I'm going to's based on the recipe from Clone Brews, with a little simplification for a Klutz like myself.

Wee MacPistols' Scotch Ale

1 lb. 55L British crystal malt
3 oz. British peat-smoked malt
2 oz. roasted barley
2 oz. Belgian aromatic malt

9 lb. light DME
½ lb. Malto-dextrin

2 oz. East Kent Goldings (bittering)
1 oz. Fuggles (flavor)
1 oz. East Kent Goldings (aroma)
½ oz. Fuggles (dry hop)

1 tsp. Irish Moss

Wyeast 1084 Irish ale yeast

1¼ cups extra-light DME (priming)

Looks good! I've done 2 batches of extract Scotch Ale using White Labs WLP028 Edinburgh Scottish Ale yeast on both, with very good results. You'll be sold on liquid yeasts and using starters!

I'm looking to do an all-grain scotch ale in a couple of weeks. In my research, I found an interesting Traquair House clone recipe. It's an 11 gal. all-grain, but you might like seeing it. He uses a base grain called Golden Promise 2-row, but I think I could substitute Crisp or Maris Otter. Take a look!
