The container says it needs to be 20-25C in a cool and dry enviroment.

I do have space in the fridge but have also read that above 50 degrees is not recommended.

Any ideas?

If it's liquid...the best way to store would be in about 5 batches of brew.

If dry, then just keep it in its original container, on a shelf in a cool dry place.

I'm assuming it's liquid since I haven't seen dry sold in 33 lb packages... You can store it at room temp away from light, but it'll be best used in 2-3 months. In the fridge maybe a little longer, and it won't darken as much over time. Ideally, I would put it in the freezer if you have room. That will really slow down the darkening and should give you at least 6-8 months out of it.
