Hey

Since the only thing (I think) that remains from the boiling hops is the bitterness... is there any reason to use one kind over another? Really no flavor from it right?

Aside from the % that the hop is and the amount you need to use... whats the difference?

You'll get some kind of flavor from bittering hops. Moreover, the profile of the bittering varies with different hops -- high levels of cohumulone are associated with a "rough" type of bitterness, for example.

Getting enough bitterness into a huge RIS or DIPA is not really practical with low-alpha hops.

Agree with 944... you do get some flavor from bittering hops IMO.

Plus, there are six alpha bittering compounds and six betas. The two most important are humulone and co-humulone. Each hop has a different mix.
