I've done two extract brews use a grain bag for steeping. Both brews were stouts using a small boil kettle and addiding water to the primary before fermentation.

I've purchased a 10 gallon brewpot with a false bottom and ball valve. I would like to use the false bottom and valve to strain the wort into the primary but I'm wondering when to add the false bottom. It seems like the false bottom should go into the kettle right away, but I'm wondering if I run the risk of scorching the wort if I cant stir all the way to the true bottom.

Any advice is appreciated. The pot is a 10 gallon pollar ware. I'm moving from extract/steeping to partial mash.

The FB should be in there the whole time. No worries about scorching, unless you do something stupid like I did once...
