I just put an oatmeal stout in the fermenting bucket. I calculated everything for a 5.5 gallon batch. I USUALLY boil off 1 gallon per hour so I started the boil with 6.5 gallons. I ended with a hair under 5 gallons for some reason... I checked the OG and it is dead on the money so I would have missed my OG a little bit ( still within range) had I hit my volume.... I went ahead and just pitched the yeast rather than adding more water...would you have topped it up? and should I add a half gallon or so to reach the volume?

If your OG is on, why dilute it? Leave it be.

That was my thoughts.....I wonder why this time my boil off was so much more?

I think it has something to do with the humidity in the air, and a few other environmental factors.
