I want to brew a hoppy wheat beer, just because!
I saw a picture of a Southampton Double White in All About Beer mag and need to brew one that looks like that. What a beautiful glass of beer. page 9
So I was thinking of using their same grain profile but using citrusy hops to get the citrusy taste instead of using fruit. See below amd feel free to comment. The grain bill has already been ordered and shipped by Ed, but I can adjust the hops.
Also, what about mash temps 150??? Do I need to do a step?

that sounds like a great recipe. did you consider dry hoping in the secondary with some of those cascades. that might give this beer the fresh crisp hopy taste and aroma that you might bee looking for. and are you going to give your unmalted wheat a protein rest? That seems like a lot of unmalted wheat. I would add some white wheat to the beer, to lighten the color.

I was thinking I would need a protein rest. Just set it up in Beersmith. I am shooting for a mash temp of 151.

I checked out the grain bill on the website and they only list unmalted wheat:

General
Style/Category Belgian white ale (aka Wit or Witbier)
Alcohol by Volume 6.6% ABV
Ingredients
Grains Unmalted wheat, extra pale barley malt, flaked oats
Spices, etc. Coriander, orange peel, lemon peel
Hops Nugget, Mt. Hood
Yeast Carefully selected Belgian yeast strain
Other
Food Pairings Pairs great with flavorful cheeses, summer salads and perfectly with seafood and sushi
