are you brewing indoors or out? If it is really cold out, the mash temp will fall quickly. Indoors it isn't that important.

Preheat the HLT cooler before putting your sparge water in it. and keep the lid closed on the hlt

Brewing inside, converted basement. Thanks for the preheating tip...wouldn't of thought of that for the HLT....

You shouldn't have too much trouble brewing indoors. Outdoor brewers will aways have to adjust for the weather.

You can heat some water then run it through the sparge arm to get a feel on the temp drop between the two vessels then adjust the hlt water accordingly

Well, brewed this past saturday. Everything went extremely well. Got 74% efficiency...very happy with the system...
