Yeast: 1056   
Yeast Starter: optional (Used 1.0 L for recipe)   
Additional Yeast or Yeast Starter: No   
Batch Size (Gallons): 5.5   
Original Gravity: 1.068   
Final Gravity: 1.011   
Boiling Time (Minutes): 60   
Color: 22   
Primary Fermentation (# of Days & Temp): 10 days 68 F   
Secondary Fermentation (# of Days & Temp): 11 days 65 F   
Tasting Notes: Great beer, delicious caramel malt body balanced by spicy bitter hops   

Grain Bill (lbs)
10.5 Maris Otter
1.0 Caravienne
1.0 Carawheat
0.5 Caramunich

Hop Schedule (ounces)
2.0 Liberty, First Wort Hopped and left in for 60 minute boil (4.5 % AAU)
1.0 Mt. Hood (3.8% AAU) + 1.0 Liberty, 40 min.
1.0 Mt. Hood + 1.0 Liberty, 20 min.
1.0 Mt. Hood, 5 minute
1.0 Mt. Hood, Secondary for 6 days


Recipe

Single Infusion Mash, Rest @ 153 F for 60 minutes
Strike was approx. 4.75 gallons @ 166 F
Batch Sparge at 168 F






This was my best recipe of 2009. I was aiming for something like a Rogue Brutal Bitter. This beer has a full body and mouthfeel. It is sweet caramely and malty balanced by a spicy clean bitterness.

This recipe looks interesting, any tips for converting it to extract?

I don't have Beersmith but I'm sure that would help. I would say you could steep the caravienne, caramunich, and carawheat. Then use a good pale extract for your base. You could put the first hop addition in with your steeping grains to first wort hop it.

So I've played around with what you've got here, to better fit some ingredients that I have available, and what I'm looking at is something like this:

7Lbs Light DME
1.0 Lbs Caravienne
1.0 Lbs Carawheat
0.5 Lbs Caramunich

.5 oz Millennium 60 min
1 oz Mt. Hood 40 min
1 oz Mt. Hood 20 min
1 oz Mt. Hood 5 min
1 oz Mt. Hood Dry Hop

Scratch that, I'll want more Millennium to compensate for a smaller boil volume.
