Looking for opinions about using roasted hazelnuts vs. hazelnut extract.
My current plan is to use some real hazelnuts (about 8 oz) in secondary--either buying them raw and roasting them myself or buying them roasted and using bourbon/vodka to sanitize them.
Will hazelnuts impart a good nutty flavor to the beer if I do it this way? Is there a better time to use them? Will the oil kill head retention? Is hazelnut extract superior?
