Oh, by the way, my LHBS DOES carry Melanoidin. A quick email with the proprieter this morning gave me the good news! Thanks Bob!

I made a test batch of this recipe and it was terrible in my opinion. Very high gravity triple IPA that is too sweet for me. The hops kick it up too much and the beer never carbed. Thankfully it was only a test batch. I've had the real Drednaught on tap and this recipe wasn't even close, it was bad. I'd stay away if I were you. I brewed the Alpha King recipe on brew365 and it is very good, try that one. You won't be disappointed. Not quite AK, but very close and a great beer. I made it for the birth of my new son and gave it out. Everyone loved it.

Harkin: thanks for letting us know. I ordered 1.25 lbs. of Melanoidin Malt and Simcoe hops for this recipe a while back. I've also got chinook, cascade, centennial, and willamette hops on hand. Any suggested recipes to use the melanoidin and simcoe (doesn't have to be hop-heavy or a pale ale/IPA) with instead of this one?

You are pretty close to Pliny the Elder with the hops you have. I would brew that if you haven't already, the clone recipe is the best beer I have brewed ever, but I am a hop head.

I'm very new to brewing and am a bit confused by the hop additions in regards to the order listed...

the 60 min makes sense...
then it has Centennial at 30, 60, and 30...wouldn't it just be a 1/2 oz at 60 and 1oz at 30? then cascade at 20, then centennial again at flameout, then dryhopped w/cascade?

like i said, i'm VERY much a beginner, but i absolutely love the dreadnaught and want to give it a go at some point
