I bottled a Belgian Wheat on Nov 29. I would like to crack some open on X-mas eve. How many days before should I put some in the fridge?

Thanks, this is my first batch. I might put one or two in the fridge a little earlier. For a pre X-mas sample

You are a few days away from the minimum time to try one...roughly 2 weeks.

But 3-4 weeks would be way better. So hold off until X-mas like you say.

I think the rule of thumb is 48 hours in the fridge before drinking...but, that is just a rule of thumb!

I'd say at least 48. I've had a couple bottles turn into geysers when I didn't have them properly conditioned. Revvy has a nice video showing it.

I can't speak for everyone but I always have one at 10 days to check how things are going.

i misread the op. after re-learning the english language, i would say put a bottle in the fridge on 20 december and give it 3 days to chill and test.

I would leave them at room temp until just a day before the party...

Chilling them longer might help clear it, but it's a wheat, so who cares?

Chilling them longer also helps the Co2 in the headspace get incorporated into the beer (if I remember correctly from a Revvy post). I woud do it 3 days before as well.
