So yeah, I just bought a pretty good espresso machine today http://www.seattlecoffeegear.com/Sae...p/scg10535.htm and I'm wondering what I can do with espresso in my homebrew if anything. Anyone got a bright idea?

You can make a stout with some espresso in it. Look for a chocolate espresso stout recipe, it's usually cooled and added to secondary.

Pack it with crushed pellet hops and brew a shot of bitter hop extract?

16 shots of espresso into a 5 gallon stout or porter recipe (post-boil) is what you should do with it. That's what I do for my annual espresso stout/porter - tastes great.

Steam extract hop oils. The bittering resins will be left behind, so you can still use them. The espresso process is too fast to get much bittering.

And then what do I do with them? Add them to a secondary as if I was dry hopping just for aroma purposes?

That's what I'd do. Just toss the shot into secondary and see how it tastes.
