You can take them apart. I've done it a couple of times. You have to unscrew everything on the stem first, then slide the stem out.
After that, you can remove the rubber gasket on the threaded end of the faucet and the "plunger" or whatever you want to call it will slide out the back of the faucet.
Just be sure you note the order of all the gaskets and bushings so you can put it back together.
EDIT: running sanitizer through it is probably good enough for regular cleaning. I let mine get super funky recently (didn't brew for a while) and I did a full breakdown and scrubbing.
