I am making Apfelwein today and instead of adding corn sugar I was planning on adding a few cans of apple juce concentrate but the frozen cans have Ascorbic acid in them for a preservitive. Will it be OK to use them? Will the Vitamin C have any Ill or Good effects?

As long as the only additive is ascorbic acid (Vitamin C) and there are no preservatives, it won't make any difference. The apple juice I use for Apfelwein has ascorbic acid and my Apfelwein turns out great.

Thanks It's all in the fermenter now. The plan is to keg it in a few months. I'm going to back sweeten it with 2 more cans of concentrate at that time. Where are you at in Chicago? I was born and raised in Joliet. GO BEARS!
