Default Making vinegar from wort

Has anybody ever tried to ferment some wort without hops, then expose to air and invite vinegar spoilage organisms to take over....how long does it take? thanks.

It's not done by "airborn exposure" that's too unpredictable, what you use is a "mother culture."
