How do you make sence of this? I seen recipes like this and I have no clue how much of what to use.

Pale Malt 73.1%
75-80L Crystal Malt 10.4%
Chocolate Malt 5.4%
Belgian Aromatic Malt 4.3%
Dark Candi Sugar 3.4% (added to boil)
Black Malt 1.7%
Carafa Malt 1.7%

You mean the percentages of the grain bill? I think that's so you can convert recipes to a five gal scale

Well, you can plug these ingredients into BeerSmith and it will show you percentages. So, start with the Pale Malt and put in, say, 6 lbs. Then you can begin to mess with the other ingredients until the percentages are right and the style guidelines are what you want (right OG, for example).

As for BeerSmith, I think it would be easiest to first get the percentages right, then setting your efficiency, then adjusting volume until you get the right OG and then scaling it to whatever you want.

I use beer alchemy and I can set by percentages, then adjust the OG until I hit my desired number, after entering my efficiency of course.
