I have a hard apple cider currently cold crashing. I was wondering if it would be ok to add a couple cans of apple concentrate to help bring back some of the apple flavor?

Sure, I do it. I also use campen and sorbate to prevent the yeast from fermenting the additional sugar. One can (12 oz) is enough for me.
