I have a question about it.

can I reboil my wort (for lets say 15 min) to re-sterilize so I could can it?

I would like to use the left overs to make starters at a later date.

thanks for the help.

Sure. Why not? You're doing the same thing to the wort as what you would be doing to anything else with pickling / canning / making jam.

oneof the guys in our club makes 2.5g worth of starters at a time.
He makes a 1.040 wort, fills canning jars, and then processes them like canned preserves in mason jars. That way he just sprays starsan arround the lip, and fills his starter vessel and goes!

FYI if you can the wort without a pressure canner be aware that the acidity is too low to prevent botulism toxin, and boiling temperature will not kill the spores. It really should be done in a pressure canner so the spores will be killed.

I've collected extra runnings, and then put them in Ziploc freezer bags and just froze it.

then thaw, boil to make sanitary and then make the starter.

this works fine especially for short term storage (a month or so). after that mine got freezer burn crystals.
