If you were going to make an unhopped beer, is there any reason to boil?

yes the boil sterlizes the wort.
how are you going to balance the sweet if you are useing the bitter of hops are you adding some other bitter or sour?

not sure. we have our first runnings in the brew kettle for a baltic porter, but enough wort to make a mild, but not enough hops to do both. thinking of unhopped since thats what the egyptians used to do...we were also thinkin maybe somethin crazy like ginger and allspice with a dry hop later.

The ginger will give it a big bite as in "ginger ale" and dry hopping will only add aroma, no bitterness.

A boil is not necessary, but after all the malt is added to the water and dissolved I would at least raise the temp to 170 and let it pasteurize for 15 mins.

It would be different than if you had boiled it since it won't get the same maillard reactions.

For info on hopless beer and bittering substitutes run a search on gruit.

Nothing wrong with gruits, unless you're afraid of tasting malt.
