Default Huckleberry Wine

Idaho's state fruit, and super abundant. But not that abundant?!

I took 3 hours to pick around 4 lbs of huckleberries today. There things smell like magic. They are so good that you sometimes have to scare the bears away from them to get the good pickings.

Yet all the recipes I find call for 10+lbs per batch.

Is there a better way to pick them, or a better recipe to follow? I use 1 Cup for a full huckleberry pie. They are super light weight and I just don't see 10lbs as something suitable.

Also to sweeten them... whats best? Dextrose, Fructose, or Sucrose. I get raw refined fructose super cheap around here.

jack keller's recipe only calls for 4# per gallon you should check out his website

I have a recipe that uses 2#'s per gallon (blueberries).

It is:

2 lbs blueberries
2 1/4 lb Sugar
1 gal boiled water
1 Pkt wine yeast

I agree with you about flavor and taste. I would think you could almost go 1 to 1 hucks to sugar and do just fine and maybe even less (1 lb hucks to 1 gallon wine) for a milder flavor. I have about a gallon picked hucks to make wine out of. I haven't started anything yet though. Hope this helps!
