Hi, I'm looking for a good chocolate stout recipe. I've seen several, including McAustin's, and several of them have a variation on "Special Dark Cocoa" in the ingredients list. Does this mean use the Hershey's candy bars, or some sort of dry cocoa powder, or some wild brewing product that I don't know about yet? If it is the candy bars, do you melt it and pour it in?
Hershey's milk chocolate bars have very little chocolate in them. Special dark cocoa is presumably cocoa powder. I don't know if "special dark" means anything. Cocoa powder can be Natural or Dutch Process. Does it matter for beer? I don't know.
