I have been doing my first brew.
4 pounds of pale, 3.3 pounds of dark extract. .5 pound roasted barley, .5 crystal. 1 oz cascade at 60mins, 1 once at 15min. saflager-23 as the yeast
It was brewed the night of the 17th. and though at the time we didn't know it the hydrometers tip was broken off but we got a reading of 1.066 OG at 80* for the pitch. Took the reading today and it read ~1.025 at 51*.
Most of the ferment it was running at 52* but looks like it was at 48 when i came home today, i turned the fridge down a bit more.
But should i take it out of the fridge at this point for two days before putting it in the freezer for three weeks?
