I'm brewing tonight and for the first time I'm using 1.5# of honey. Does honey have the potential to burn on the bottom of the kettle like LME? The recipe calls for the honey to be added 45 minutes into the boil. Do I need to take it off the heat when adding the honey or is it somehow different than LME?

yeah it will burn like LME. I would recomend stiring it in slowly and continue to stir until you are sure it's all disolved in. I dunno if I would take it off the heat at all just dont let it settle to the bottom and you'll be fine

If there's room in the container, I usually put hot or near boiling water in the honey (scooped out of my boil) and put the lid back on. Shake it for a bit and it mixes in better. Side effect: also gets most of the honey out the first time with no scraping.

I do the same thing with LME that comes in those plastic 1 gallon containers.

I do the exact same thing. After adding the hot wort to the LME container I cool it in the fridge for 5 minutes, then dump it in with my yeast starter. It really gets the starter kick started again. I get my stuff from MoreBeer; great containers, none of that canned crap. Great for spam, though.

If you want the flavor of the honey, and not just the fermentables, don't even put it in the boil. Before you start your pot, try this. For 1.5# honey, in a seperate pot, heat about 1 pt. of water to near boil, add honey, and heat to ~185. Cover and put in 185 oven until your boil is done, then add while cooling. You've pasteurized the honey, but not boiled off the flavors that make honey taste like honey. You'll notice it in your final brew.
