Its been 4 days since I started fermenting 5gal of Portland Pale Ale. My original specific gravity was 1.053. Until last night, the airlock was bubbling happily. It has seemed to slow to almost a stop (maybe one bubble every 30 minutes). I tested the specific gravity again this morning (from my 8oz satillite) and its 1.020.
I am going away for a few days and my plan was to wait untlil next saturday before I started to bottle. Is it bad to leave the beer in the primary fermenter for 12 days total?
