So let's say I am doing a 10 gallon brew day with the intention of fermenting two 5 gallon batches of the same wort with 2 different yeasts. I have but one stir plate. If I grow one batch of yeast up so it's ready a few days ahead of time, take it off the stir plate and put it in the fridge so I can stir growing up the second, will the first still be viable in a few days on brew day? Or should I just grow one batch of yeast and pitch a few vials of the second?

Of course. Yeast stay viable in the fridge for a long time (a couple to a few months).

BTW, you don't HAVE to use a stir plate. You can just use a big jar with aluminum foil covering the top.

Absolutely, they will be fine in the fridge. I typically put my 1000mL or larger starters in the fridge anyways to help the yeast floc our for easier decanting.
