I have brought this recipe through a few iterations, and I really like it. It has a nice ginger heat, but a smooth flavor. Unrefined sugar, honey, and pineapple give nice support to the ginger.

I make it 1 gallon at a time and force carbonate it in 2 liter bottles using a carbonater cap.

Recipe for 1 gallon:

1 gal. H2O.
10 oz fresh ginger, finely chopped.
1/2 C demerara sugar (or evap. cane juice, other pale unrefined sugar).
1 large lemon, flesh and peel, chopped.
4 oz very ripe pineapple, finely chopped.
1/2 C honey.
1 C Fructose (used simply because it's sweeter per calorie than table sugar. Could use approx 1 3/4 C sucrose.)

Simmer all above ingredients 30 minutes, covered. Cool in ice bath, then add:

1/2 to 1 tsp vanilla. (depending on your tastes)

Strain the liquid into bottles.

Chill, carb, drink! (or follow standard yeast carbing methods if you prefer.)
