Default Brass

can I use a brass valve on my mash pot?

How about the valve on the brew pot?
I do see brass fittings for sale in the brewing catalog, are those for gas only?

What do you use to when threading stainless steel parts together that you might some day want to remove?

Yes, you can use brass. Best to take the precaution written here (Cleaning Brass) prior to using.

Use Teflon tape on all your threaded fittings.
