im doing a widmere style hefeweizen and my brew shop gave me the recipe and it only has 1 ounce of hops and im not sure when to add them heres my recipe

5 1/2 lbs g. pale grain
5 1/2 lbs g. wheat grain
1 oz. saaz hops
1 wyeast #2565 kolsch
original grav. 1.048
60 min boil

1oz is probably fine for a hefeweizen. Maybe .75 at 45 and the rest at 15. What's with the kolsch yeast?

its what the brew shop said to use, its actually a brew wholesale shop the sell to all the micro breweries in seattle area so i hope they know what there talking about

I'm afraid I can't see that yeast producing a hefeweizen. Kolsch is a pretty clean fermenting beer whereas hefeweizens kick off all sorts of esters during reproduction and fermentation. I'll bet it will be tasty, but it certainly won't end up being a hefeweizen.

Looks like its recommended for American wheat and rye beers

Ah, I didn't realize widmer was in fact an American wheat beer rather than something closer to a Bavarian hefeweizen. You should be fine.

Widmer is an American Wheat, not hefeweizen by strict definition. I brewed an Am wheat last week with s-05. for an Am wheat you want a clean yeast.

my recipe was a clean out the closet type...
