Any thoughts? It's for a 5 gal batch.



51.3 % 5.00 lb German Dark wheat
35.9 % 3.50 lb German Pilsener
10.3 % 1.00 lb German Munich
2.6 % 0.25 lb German Carafa

I like a lot more Munich.

I'm a little new at AG, Is the Munich modified enough for the Dark Wheat to convert? Any input is great. Thanks

The dark wheat may not be, I don't know. Put some American malted wheat in the mix and it would be for sure.

Little light on the fermentables, I like my beers a little heavier. OK for the style, though. The Dunkelweiss I have had in Germany was only a little over 5% ABV.

How about some Vienna, in place of the pils? Maybe some 2-row or 6-row too, to help with the conversion of the wheat.

American malted wheat has the same diastatic power as six-row.
Briess Malt & Ingredients Co.: Base Malts
The red wheat is even higher. Great Western white wheat malt has a diastatic power of 188!
