does anyone know what the sugar content of honey is? say 1 tbsp of honey = 1 tbsp sugar? also will yeast act the same way towards honey? or would it mess up if I replace all the sugar with honey?

Wasn't sure if you were referring to fermenting or priming for bottling.
Here's a link for the amounts needed for priming. Miscellaneous Brewing Charts

Honey is about 20% water by weight. So 1oz sugar = 1.2oz honey. Ofcouse honey does vary some but unless you get some poor quality watery honey it shouldn't vary by much.
