Default Something slightly different?

Two weeks ago I decided to try making something off the wall -

the recipe consists of apple juice, light DME, S-04 and some strong ass earl grey tea...

It smells absolutely wonderful at week 2...

I'll post a full recipe if it actually comes out decent.

In primary: Earl Gray hard cider,
In secondary: Blueberry apple Monster
Bottled: "All apple" Apfelwein, Mixed berry country wine, Kick yer' butt Hard Cider, "All apple" Achtung!Apfelwein, Kumquat mead, "All apple" hard cider.
Drinking: "All Apple" Apfelwein, Mixed Berry Country wine, Blueberry Belgian White ale.

mine has no hops in it - so it's still technically not an "apple beer"
