Just filled 40 bottles with some Irish stout (I kegged my last, and first, batch).

What signs should I keep an eye out for to satisfy myself that the beer is carbonating and aging?

Sometimes you can see some yeast at the top of the beer but a stout is to dark to tell. Best way is to chill one and open it.

I have found that if the beer is clear, you can chill it. Maybe the experts here would say something different, but that has been my experience. Once the cloudiness is gone, chill a bottle and open it up. That's the best you will do do a test of carbonation. Let the rest of the batch sit for the ful three weeks, and then chill it too.

Give it 3 weeks at 70 degrees or more, then chill one for a couple days and pour it.

+1 to this...there's no magic visual signs that will tell you...Just keep them in a 70 degree place, and come back to them in three weeks.
