I have 5 gallons of apple juice, 1lb of brown sugar, 32oz of maple-blueberry syrup (all natural), and LALVIN EC-1118 Wine Yeast (it's whats in the fridge).

Question 1: should I mix this in a 5 or 6.5 gal carboy.

Question 2: should I add more suggar (I have white cane and more brown).

Note: I'm experimenting and it turns out my local supermarket does not sell corn sugar (I'll be darned.. . who wudda thunk)?

Going to the basement to grab the 5gl now so if I should be using the 6.5 please speak now.

that's a lot of fermentables, I wouldn't add more sugar. You'll have to age it 10 years before it will be drinkable.

I'd go with the light brown sugar, personally. Dark brown makes flavors that wouldn't fit very well with fruit, IMHO.

Cane sugar is fine, since you are making something winey/cidery anyway.

you can normally get Dextros in the health food aisle. Did you check there?

Cane sugar will work fine. I personally don't like going to high with the sugar. It gives me a headache if a high percentage of fermentables is coming from sugar.

I do not want to sound like a newbie but I don't know what you mean.

brings up the question: What can I add as fermentables that are not from sugar?

Well you basically are stuck with sugar since the other ferntables are from the juice.

Sorry, on pain killers right now or I'd explain better.

you could add apple juice concentrate as an alternative to using sugar. be advised that this will increase the necessary aging time to get a smooth flavor.

TOOOOOOOOOOO late for more comments..

I put:

5gl apple juice

and now I am drunk and going to bed
