What kind of beer will result if I use the 2308 Munich lager instead
of the 2007 Pilsen as listed in this recipe? I have the Munich on
hand.

7.5 lbs. Rahr 6-Row
0.5 lbs. US Carapils
1 lbs. Flaked Maize
1.5 oz. Cluster (60 min)
Wyeast #2007 Pilsen Lager Yeast

I should come out fairly similar, with a slightly maltier profile and a tad more body/less crisp. Both are great yeasts, and can usually be used interchangeably.

2007 is the Budweiser strain, which is supposed to develop a light apple ester. It would seem to complement the very American ingredients listed.

2007 is a much more rapid fermenter and forms exceptionally compact lees. 2308 is less attenuative (maltier) and IMHO, requires larger pitches. Not surprisingly, the 2007 is better in Pils, the 2308 in Fest beers. Both are awesome strains produced by masters of brewing.
