If I were to age mead in reused wine bottles for a few years, would I need to make sure that some oxygen was in contact with a breathable cork? I was considering using the plastic top "tasting corks" and sealing with wax. Would this, (as opposed to using a natural, tight fitting cork without sealing on top), slow down the again process?

Plastic corks + wax will definitely not be enough to seal them properly for any real amount of time. I only use those as intended, for tasting and once the bottle has been opened.

any creative ways to get corks into bottles without a machine?

You could just buy a hand corker from any wine brewing shop for about $15.00

I just picked up a hand corker today for $5.50. Its a two peice plastic contraption. It actually works great. I used #9 corks with little problem, however I corked two champagne bottles and just about had to stand on it to get them in.
